Blog Bug




Well I have definitely caught the blog bug! Lola has been preoccupied writing about North West Coast Art, so I have kept myself busy with some new recipes. Tonight we were craving something sweet (but healthy) so I turned to our new "raw foods-real world" book for inspiration. You give this a read through, while I go grab another one to munch on!

Dark Chocolate Macaroons

3 cups unsweetened coconut
1 1/2 cups cocoa powder
1 cup maple syrup
1/3 cup coconut butter
1 tbsp vanilla extract
1/2 tsp salt

-> This was the recipe from the book BUT we had some issues. Firstly, the coconut butter was a little too hard so there was nothing making it all stick together. While the raw foodies would disapprove, we threw it in the microwave for a quick zap. Secondly, it was way too bitter to our liking. So we made some improvements...

3 tbsp almond butter
a splash of unsweetened almond milk
1/2 cup carob chips
pinch of Stevia

So after mixing everything together, I rolled it into nice little balls of goodness and stuck them in the freezer for about 10 minutes. If you have lots of time on your hands, feel free to put them in the fridge, but for those of you that don't want to wait around forever (like me), the freezer does the trick. So make some tea, then voila- a nice little treat! Also, the extras are great to throw in a ziploc, into the freezer and grab for a quick snack.

Maple Syrup. Essential to "healthy" cooking. (Or so we tell ourselves!)


Coconut Oil/Butter. A tasty new find. It's considered 'butter' when at room temperature, but as it gets warm it's more of an oil. So heating it slightly helps a lot with this recipe.

With the help of our extra ingredients, the mixture became dark and was much easier to form into balls. We also added the carob chips at this point- which we are now addicted to.

After spending some time in the freezer, plop one right into your mouth, and any chocolate cravings with melt away.

Starting Out

So we decided to start a blog. This was a decision made after a few too many glasses of wine were consumed- but upon sobering up we decided this was indeed a fun idea. Together we have been on a hunt for simple ways to live healthier, and throughout this process we have turned to the help of many other bloggers. Now while this was our initial inspiration, we decided we want to do more than just write about food. "We should write about the bizarre people we meet," Lola exclaimed, to which my response was, "And the wine we are drinking!" And this turned into a brainstorming spiral that neither of us could really keep track of. So here we are. This will be a blog about, well, anything and everything. We will not hold back. We may use pseudonyms for some 'characters' that enter our lives, but all else will be true. So come back, laugh with us (or at us), read more and share with us.
